@Sunburst, typing from my mobile so bear with me.

kodri is foxtail millet. varagu is kodo millet and sanwa is kuthiravali or barnyard millet. so i am going to assume it is baryard.

what we get in packs is processed so it cooks almost like rice. i dont do soaking time and the water i use is 1/5 th cup millet around 1/2 cup and more water
    a little trial and error.

i did not soak it.i pressure cooked for 4 whistles for fluffy rice and the millets.

my family prefers samai and varagu more than the thinai and kuthiravali.

    hope this has been helpful.

Thank you @shanvi . Yours look so nice and fluffy . I couldn’t find the other names you mentioned in our grocery stores here .

Will try your technique of cooking millet.

@Sunburst i meant the same thing has so many names. arre label had kodri and you said sanwa.. that is what i meant

i make kozhukattai, adai, kitchdi, pulao, bhaths, dosai and idli and pongal. most recipes for the same are here in this thread

once you get the knack of getting it right as per your requirement. either fluffy or mushy, you are set

i make the same except instead of sambhar powder i grind kootu powder.

make it with dal and tomatoes, dal and gongura/sorrel, dal and radhish, and dal and coriander stalks(i don’t waste the long thick stalks. they are flavorful in sambhars) and no tamarind and more tomatoes mostly.
