    Veggie Hotch Potch

    Noodles served in spicy veggie sauce.

    Ingredients 1cup boiled noodles
    1large onion grated
    2 tomatoes grated
    2 potatoes boiled and sliced
    1 capsicum deseeded and cut into round shape
    1spring onion finely chopped
    1/2 tsp. ginger grated
    1 tsp. garlic grated
    1 tsp. red chili powder
    1 tbsp. corn flour
    1 tbsp. grated cheese
    1 tbsp. coriander chopped
    2 tbsp. Oil
    Salt acco to taste

    Advice One can also use macaroni in case of noodles.

    Serve with Warm buns or garlic bread.

    Method 1.Heat oil in a pan and add ginger, garlic, and onion. Stir fry for a minute and then add all the vegetables (except the tomatoes and potatoes).
    2.Fry the vegetables till they become tender. Now mix corn flour in 1 cup water and make a smooth paste.
    3.Mix chili, salt and tomatoes and add them into the vegetables, but keep on stirring .
    4.Boil, stir and Simmer for 2-3 minutes till it becomes semi liquid.
    5.Now mix the grated cheese in the sliced potato. Grease the ovenproof dish, and place the macaroni or noodles at bottom and pour the veg sauce on top.
    6.Sprinkle potato- cheese mixture and coriander all over and bake it in a hot oven (300 degree C) till the potato -cheese layer on the top becomes golden brown.
