Vegetarians options in Disney World Orlando

I recently took my parents to Disney world. We were interested only in Magickindom and Hollywood studios. We are vegetarians, so options were limited. I had packed parathas and tomato chutney but had to eat there at dinner time. We are particular about food and it cant be bland. My mom doesnt consider tomato, cucumber slices in a bun as a meal

The map indicates the restaurants with vegetarian options with a (V). Here's what I liked:
Magic kingdom - In Tomorrowland - Cosmic Ray's Starlight Café - veggie sandwich and veggie burger
Hollywood studios - In Backlot - Backlot Express - Grilled veggie sub. Delicious.

If visiting in summer, carry juice pouches, water and have plenty of yogurt. My backpack was filled with it.
