Ulandogare is authentic Iyengar recipe. It’s very tasty and nutritious with just few ingredients. It’s perfect for this chilly weather . It’s somewhat similar to coconut rice. My mom used to make coconut rice during chilly weather. With the addition of garlic and pepper it used to be perfect for chilly nights.. Recipe Urad dal : 4tbsp Pepper: 1 tsp Salt Rice : 3/4 cup Ghee : 3tbsp or be generous and add more Dry coconut : 1/4 cup Oil Method 1. Cook the rice and cool it completely. 2. Add oil to a pan, add urad dal and roast until it browns lightly. 3. Now add pepper and do the same. Switch off the stove and add copra to it and fry it for a while. Grind all these 3 coarsely. 4. Now take a Kadai and add ghee. Then add all the tempering items. Now add the grounded powder and fry for a minute. Mix it with rice, salt and coriander.
Nice dish. Need just one clarification - does urad dal needs pre-soaking or just to be washed and cooked.
