    Difference between type of rice

Chitra maami, can you please help me understand the difference between using puzhungarisi and idli arisi (boiled rice and idli rice) for dosai/idli maavu?

For now, I use whatever I remember to pick up from the Indian store (or what I remember to write on the list for my husband to pick up). I haven't tracked the difference to see which one of them the batter turned out better, or if there is even any difference because sometimes the batter seems to ferment and sometimes, not so much. Can you help, please? :)

Re: Difference between type of rice

Though both are the same, now idli arisi is called parb oiled rice. This & fermentation are not inter related.

    Help! Adirasam sweet

    Hi Chitra mam,
Yesterday i tried to make adirasam. It was a disaster. Please tell me the right way to make the paagu. I used store bought rice flour and jaggery(Achu vellam, the taper one not the round one) , once i poured the paagu to the rice flour,
the rice flour became like small rocks, what did i do wrong:spin

I am going to make the rice flour at home and try again but i am not sure about paagu consistency..Please help,
Which jaggery is good for this, if there is any difference.
    Thanks a lot:bowdown
