    They differ in intensity...corn starch is stronger...corn flour is comparatively mild...suppose a recipe asks you to add 2 tsp corn starch and you have corn flour...add more than 2 tsp of corn flour...

    you can coat the cutlets with corn starch before frying..be careful with the amount though...corn starch is strong! for frying corn flour will be better actually...

    Dear chitra Amma, can we add tamarind while grinding instant sambar powder?If so how to roast tamarind?How log can we store it?Please help me Amma..:)..As ihave a spinal cord problem your recipes are helping me a lots amma...feel that my amma is with me..thanks with much respects...

    I wanted to try your athirasam recipe for diwali. I couln't find maavu arisi here in US. since you said the rice needs to be big, i bought a bag of kerala matta rice. i didn't even open the bag. wil that be good or do i need to buy something else like sonamasoori or go with idly rice?

    I suggest sona masuri or buy readily available rice flour & follow the recipe in SBS.
