    The cooking method used can significantly impact the nutrient availability of the potato.

    Potatoes are a very good source of Vitamin C, Vitamin B6, fiber, potassium, copper, manganese etc.

    Vitamin C and protein contents are lost while frying the potato. Baking, steaming or barbecued roasted potatoes retain all the above.

    Peeling the potatoes is never advised. The skin provides a good protection against the nutritional loss in the process of cooking. The mineral content and the proteins beneath the skin are very high.

    It is advised to heat the water to the boiling point before adding the potatoes, which helps retain Vitamin C.
