Storing Eggs

    Hi,
    This question is especially for ilites who live in hot humid climates.
    How do you store your eggs?
    On the kitchen counter or refrigerator?
    Do you wash them before storing?
    Also, how old an egg would you use ?

    I generally wash them. But recently read that washing eggs, pushes the water with dirt ( on the egg surface) through micropores present on them.
    Also I store them in the refrigerator. Jus my feeling that, that way they stay fresh for long.
    I try to use them max by a week.

    Pls do share your inputs !!

    Always in the refrigerator. I never wash till just before use. I have kept them for up to 2-4 weeks after buying.

    In the UK, hens are vaccinated against salmonella. Also, the eggs retain their cuticle. So the eggs are safe to store at room temperature.

    In USA, the eggs are washed thoroughly, dried and sprayed with chlorine soon after they're laid. This removes the cuticle. Also, hens are not always vaccinated. These eggs should be refrigerated.

    I don't wash eggs. I store them pointy side down in egg cartons in the fridge.

    I usually use them pretty soon after buying them. When in doubt, I gently drop the egg in a bowl of cold water. If it sinks, it's good.
