Special cheese cake <table border="0" cellpadding="5" cellspacing="2" width="100%"><tbody><tr><td><table align="left" bgcolor="#fff2e6" border="0" cellpadding="2" cellspacing="2" width="420"><tbody><tr><td>To make the crust: ½ cup cashewnut powder 1 cup sugar ¼ cup butter For the cake: 1½ cup cream cheese 1 cup castor sugar 3 eggs 1 tbsp lemon juice ½ tsp vanilla essence ¼ cup glazed cherries Method For the crust, mix together all the ingredients and spread in an eight inch baking dish. Set aside. Cream together the cream cheese and sugar till smooth. Separate yolks and whites of eggs. Beat egg yolk and mix them well into the cheese and sugar mixture. Stir in the lemon juice and vanilla essence into the mixture. Using a whisk beat egg whites till they form soft peaks. Fold in the beaten egg whites into the mixture. Pour the mixture over the crust, lined in the baking dish. Bake in a pre-heated oven for 30 minutes. Cool and put in the fridge.
