    Ladies, I "had" to share this with you. Below is my daughters favorite recipe! its the first time I tried today and trust me, she ate every bit of it and was opening her mouth when I was wiping her off!! I am not surprised, it really was yum. try it out.

    Summer Savory:
    Potatoes: 1 cup peeled and chopped
    corn kernels: 1/2 cup (fresh or frozen)
    Leeks: the white part, cut in small pieces
    Tomato: 1 medium cut into small pieces
    Parsley: 1 tbsp (you can substitute this with coriander leaves or chives)
    salt and water or Vegetable stock
    Ghee: 1 tbsp

    Method:
    Heat ghee in a pan and add the chopped leeks. Fry for 2 mins but do not let it brown. Add the potatoes, corn and tomatoes and fry for 5 mins. Add salt and just enough water to cover the veggies. Alternatively substitute salt and water with low-sodium vegetable stock. Cook until tender and the veggies are soft.
    stir in parsley.
    Puree or mash to the desired consistency.

    Note: If you cant find leeks, you can substitute this with spring onions. Leeks have a subtle flavor than onions.

    Citrus couscous:

    This is not my Dd's favorite but sharing it anyway for the benefit of mom's looking for lunch variety. I have taken a picture; shall post it soon.
    Good for 6 months and above.

    Ingredients:
    Whole wheat couscous: 1 cup
    Vegetable broth: 1 cup (can substitute with salt and water)
    Orange juice: 1/2 cup
    Orange fruit: a few peices, about 1/4 to 1/2 cup
    Ghee
    Leeks or spring onion: 3 tbsp, finely chopped
    Fresh parsley or coriander leaves: 1 tbsp

    Boil the stock and orange juice. Add couscous and cook until tender (about 3-4 mins) cover and let it stand.

    Heat ghee in another pan and add leeks/onion. Once they are translucent, remove from heat and let it cool. In a blended, add couscous, leeks/onion, orange pieces and parsley. Grind to the desired consistency. Older kids can have this with out grinding. Store the left overs in fridge up to 3 days.

    The taste was good. I liked it. Dd also liked it.

    It's crushed Semolina Karanu. Not sure if it's dalia. But I guess you could try the dalia.

    To improve my DD's weight, I have started giving her dry fruits milkshake. She likes it and is easy to prepare.

    Dates - 1 (deseeded)
    Prunes - 1
    Raisins - 3-4
    Figs - 1 small piece
    Milk - 1/2 cup warm

    Pressure cook all the dry fruits with just about 2 tsp of water for 3 whistles. Once cooled, blend together in a mixer first with a little warm milk. Once they are nicely smashed, add the remaining milk and blend for a few seconds. Strain the milkshake and feed.

    I haven't added any nuts like badam, cashew in this milkshake. It's only dry fruits.

    To break the monotony of rice+dhal+veg combo for lunch, I give my DD vegetable rice now and then. The following is the recipe for carrot rice (you can follow the same recipe with beetroot, spinach or cabbage)

    Ingredients:
    1 carrot (finely grated)
    1 handful of cooked rice (I pressure cook for 4 whistles)
    1 garlic pod (finely chopped)
    1/4 onion (finely chopped)
    1/2 tsp olive oil or ghee
    1/4 tsp mustard
    a pinch of salt
    a pinch of pepper powder

    Heat a pan, add olive oil. Once it's hot, add mustard. After it crackles, add finely chopped garlic, onions. Once they are lightly fried, add grated carrot. Sprinkle little water. After it's cooked, add salt, pepper powder and cooked rice. Mix well. Serve hot.
