Recipes for Delhi Summer

    Bread Bhel Puri is light and appetizing. It is perfect for Delhi summers. This is how I make it:

    Ingredients:
    • 8 Bread Slices
    • ½ cup Potatoes (boiled & chopped)
    • ½ cup Cucumber (chopped)
    • ½ cup Onion (chopped)
    • ¼ cup Tomato (chopped)
    • ¼ cup Peanuts (roasted)
    • 4 Green Chili (chopped)
    • ¼ cup Fresh Coriander (chopped)
    • ½ cup Sev
    • ½ cup Gol Gappas
    • 6 tbsp Sweet Tamarind Chutney
    • 6 tbsp Mint or Coriander Chutney
    • 2 tbsp Lime Juice
    • Oil to shallow fry
    • Salt to taste

    How to make Bread Bhel Puri:
    • Take the bread slices and cut them into small pieces.
    • Heat oil in a pan and shallow fry the bread pieces till they turn crispy brown.
    • Take out the bread pieces and drain the excess oil on an absorbent paper.
    • Put the fried bread pieces in a bowl. Add potatoes, cucumber, onions, tomato, green chili, peanut, and salt to it. Mix them well.
    • Now, lightly crush the gol gappas and add them to the above. Also add tamarind chutney, green chutney and lime juice. Mix them well.
    • Sprinkle sev on the top of the mixture. Garnish it with coriander leaves.
    • Bread Bhel Puri is ready to serve.

    Last night I had delicious Chhaana’r Daalna at my Bengali neighbour’s place. I loved it. Here is the recipe for you all::

    Ingredients

    • 1 tbsp Ghee
    • 250 g Cottage Cheese (Paneer) (cubed)
    • 1 medium Potatoes (cubed)
    • Oil for frying
    • 1/4 tsp Turmeric (powder)
    • 1 tsp Ginger (paste)
    • 2 - 3 Green Chilies
    • Salt to taste
    • 1 1/2 tsp Cumin Seed (paste)
    • 1/2 cup Milk
    • 1/2 tsp Cumin Seeds
    • 1/2 tsp Sugar
    • 1/2 tsp Garam Masala (powder)
    • 1 cup Water

    How to make Chhaanar Daalna :

    • Heat some oil in a pan and fry the potatoes.
    • Fry the paneer in the same oil and dip them in warm water to make them tender.
    • Now heat some ghee in a pan and add some cumin seeds. Let them splutter. To this add the cumin paste mixed with a little water, ginger juice and turmeric powder. Stir fry for 2 miutes.
    • To this, mix the potatoes, green chilies, garam masala powder, sugar, salt and cover and stir fry till the potatoes are tender.
    • Add the milk and the remaining water and allow it to simmer for 2-3 minutes.
    • Chhaanar Daalna is ready to be served.

    I had a wonderful drink last evening at my colleague’s place. His wife called it Magic Cooler. She made it with Pudina (Mint), orange juice and lemon juice.

    Ingredients:
    • 1 cup Orange juice
    • 1 cup Lemon juice
    • 2 1/2 cup Water
    • 2 cup Sugar
    • 32 ounces ginger ale
    • 10 sprigs Mint

    How to make Magic Cooler:
    • In a sauce pan, mix lemon juice, orange juice, sugar, water and mint.
    • Bring the juice mixture to boil stirring until sugar dissolves.
    • Remove from heat and let it cool.
    • Once it cool enough, strain the juice mixture
    • Keep the juice mixture in refrigerator for thirty minutes
    • To serve, fill glass with equal amount of ginger ale, juice mixture, and water
    • Add ice cubes and serve immediately

    Awesome recipes, Anandi!! I have had Chhanar Daalna at a Bengali friend’s place. I liked it. The Magic Cooler sounds irresistible. I can’t wait to make it!!

    I learned to make Dahi Aloo from my friend. Here is the recipe::

    Ingredients:
    • 3-4 Potatoes (boiled)
    • 1/4 tsp Chaat Masala
    • 2 tbsp Curd/ Yogurt
    • 1 tsp Cumin Seeds (Jeera)
    • 1 tsp Red Chilli Powder
    • 1 cup Coriander Leaves (Dhaniya)
    • 1 tsp Oil
    • Salt as per taste

    How to make Dahi Aloo:
    • Peel the potatoes and cut them in cubes.
    • In a pan, heat oil and add cumin seeds.
    • When the cumin seeds are golden brown, add chaat masala and chilli powder.
    • Now, add the potatoes.
    • Mix well
    • Add curd and mix well.
    • When done, remove from heat.
    • Garnish with coriander leaves.


    I think it will be good for summer with “dahi” in it.:)

    This is how my friend makes Pina Colada Lassi!!

    Ingredients:
    • 150 ml chilled pineapple juice (approx 5 fl ounces)
    • 150 ml coconut cream (approx 5 fl ounces)
    • 150 ml thick sweetened (but unflavored) yogurt (approx 5 fl ounces)
    • 1 cup crushed ice
    • 1/4 cup finely chopped pineapple pieces
    • 2 maraschino cherries to garnish


    Preparation:
    • Blend the pineapple juice, coconut milk, yogurt and crushed ice in a blender till smooth.
    • Pour into 2 tall, chilled glasses, garnish each with finely chopped pineapple and a maraschino cherry

    As we all know, Pina Colada is a popular western drink. This is the Indian version. It is very good for summer

    Dahi Aloo and Pina Colada Lassi looks very tempting!!

    My niece has learned to make Lemon Ice Cream Pie at her Cooking Class. She asked me to share the recipe with you all

    Ingredients

    Bourbon biscuits : ¼ kilo
    Butter : ¼ cup

    Lemon sauce

    [JUSTIFY]
    1. Lemon juice : ½ cup
    2. Corn flour : 1 tbsp
    3. Yellow of egg : 2
    4. Sugar : 1 cup
    5. Water : ½ cup
    [/JUSTIFY]​

    Method

    Break the biscuits and mix with melted butter.
    Place the contents in a 10" pie vessel and refrigerate.
    Place basic vanilla ice cream in the vessel with biscuits.
    Pour lemon sauce over the biscuits, refrigerate, sprinkle walnuts and serve.

    Lemon sauce

    Mix sugar, corn flour with water to form a paste.
    Boil on a medium flame, stir well till contents thicken.
    Add yellow of egg one by one and beat.
    When the contents start boiling, remove from the stove.
    Cool and strain.

    Summer makes us so drained and tired that we often lose appetite. My Mom makes an appetizing drink in summer which we have whenever we lose our hunger.
    I am sharing her recipe with you.

    Appetizing Drink

    Ingredients:
    • ¼ tsp Peppercorns (crushed)
    • 1½ tsp Lemon Juice
    • ¼ tsp Asafoetida
    • ¼ tsp Salt

    How to make Appetizing Drink:
    • Take a cup of water and add asafoetida, salt and crushed peppercorns; simmer for about 10 minutes.
    • Remove from heat and stir in lemon juice; serve it hot.

    Anjeer Chutney is one of the most delicious chutneys that my Grandma used to make!! It is very tasty and helps to get back one’s appetite in summer

    Here is the recipe::

    Ingredients:
    • 500 g Figs (Anjeer) (blanched and sliced)
    • 15-20 Almonds (Badam) (blanched and sliced)
    • 3 tbsp Oil
    • 4-5 cloves Garlic (chopped)
    • 2 medium Onion (chopped)
    • 2 tbsp Malt Vinegar
    • 1 tsp Red Chilli Powder
    • Salt to taste
    • 4 tbsp Sugar
    • 3 Green Chillies (finely chopped)
    • 1 tsp Green Cardamom Powder
    • 2 tbsp White Vinegar
    • 1 tbsp Melon Seeds (Magaz)

    How to make Anjeer Chutney:
    • In a kadhai, heat two tablespoon of oil and lightly sauté the garlic followed by onions.
    • Add malt vinegar, red chilli powder, salt, three tablespoons of sugar and a quarter cup of water to it and mix well.
    • Remove from heat and allow it to cool.
    • In a blender take figs, green chillies, half of the almonds, green cardamom powder, the cooked spices, a tablespoon of white vinegar and water and make a smooth paste.
    • In a wok (kadhai), heat the remaining oil and add melon seeds, sliced almonds, and the fig paste and mix well. Adjust seasoning.
    • Add remaining sugar for glaze and white vinegar for sourness.
    • Remove from heat and cool.
    • Serve.
