Rajasthani Lahsun Ki Chutney

    There is a local resturant from where we buy Lahsun ki chutney. But as it is full of chillies, I tried to make something similar, and it did come out quite a lot same.

    Ingredients

    To grind together:
    Half cup garlic roughly chopped
    Half cup fresh coriander chopped
    4-5 green chillies (reduce according to taste)
    Aesfotida two pinches
    1/2tsp haldi
    1 tsp Fennel seeds roasted and ground
    juice of a lemon/ tamarind extract
    salt to taste

    To cook :
    1 tbsp mustard oil
    1/2 tsp jeera

    Method:
    1.Grind all the ingredients for grinding.

    2. Heat a pan , add oil. When it is hot add jeera, wait for a few seconds and then add the ground material.

    3. Cook for five minutes.

    4. Can be refrigerated for a week. The hotel guy uses more oil and it adds to the taste. You can try doubling the oil.

    This actually is mouthwatering. Generally the chutneys are ground and stored, but this one gets a beautiful flavour after cooking. I have started storing it nowdays, as in the winter season the garlic is good for health and any bland food is livened with same.

    Sounds interesting Muzna. Will try it out for sure. But I am wondering if the raw taste of garlic will be too over powering ?? It might keep the evil spirits as well as my hubby away!! :hide:

    Should we roast the garlic a bit before grinding ?? Maybe the fennel seeds might mask the raw taste isn't it??? It sounds interesting..... I shall try it out.

    Yeh baat maine sochi hi nahin...
    first of all, as we cook this version of garlic chutney, the taste would not be very overpowering. Secondly you can reduce the quantity of garlic a bit, koi problem nahin.
    The most important point comes now....
    do not include this in your dinner:hide:

    Hey friends..though I haven't tried this chutney yet, I am sure, the garlic smell would not chase anyone away :-D, as it is going to be cooked for about 5 mins.
    I have had one garlic chutney with no coriander leaves as in this case. only garlic and red chillis, a bit of onion and tamarind ....fiery hot. but no smell of lahsun.

    I made your Rajasthani lahsun ki chutney today and served it with our South Indian Idli to our guests from Austin, Texas! They just loved it...
    K2S! I think love is more overpowering than the smell of lahsun... hahahaha
