This is my daughters favorite Veg recipe

    Veg quesadilla

    Chapathi- 2 Nos

    Carrot -1 Big shredded

    cabbage- shredded 1/2 cup

    Onion - 1

Mozarella cheese - 3 tbsp shredded

salt , pepper powder- to taste

    Method

Mix cut onions. shredded carrot and cabbage and add salt according to taste.
In a plate place a chapathi, spread across in a layer little shredded cheese. above that layer the carrotcabbage mixture.sprinkle little pepper powderrrr and finally spread another layer of left over cheese and place the second chapathi over it. Now cook over a tawa for 1minute. turn the chapathi and cook the other side also for 1 min. transfer in to a plate, cut in to four and serve. any vegetables can be added and not only restricted to carrot and cabbage. you can also add shredded and cooked chicken along with the vegetables. kids will love this.

    Hi all.
I do not have kids but this is a quick recipe that I make often for our lunch, especially when I am in a hurry.

I wrap chappatis in 1 box.
In the second box i empty half a can of baked beans, chopped onion and tomato, corn, olives, jalapenos, etc .. whatever vegetable I have in the fridge. Then I just add some salt pepper and mayo and mix.
At lunch I just spread this vegetable mix on chappati with a spoon and roll it and eat.
Since I doubt your kid would do that you could make a drier mixture to roll in the chapatti
