If I were you, I would keep it non-religious. A thank you note and something local for him to remember his time at the university would be great. We like to buy a coffee book from the local town. Or something as simple as a card with messages from former students would be appreciated. If you want to buy something, look for a book or an artifact related to his work. We work on infectious diseases and a little thing with my model organism/a little plush toy bug is always a treasure.

Not much! A gift is a token to show that you appreciate them. It shouldn't have a big monetary value. Most universities limit the gift amount. I don't accept gifts unless it is something small like a coffee mug or tea (under $25).
