    Dear friends,

    Can anybody teach me how to do south indian style pudina chutney that we can eat with idly.I have tried many times but my chutney turns out like some masala for some pulavs :bonk.

    Hi,
    This is the simple pudina (mint) chutney receipe

    Ingredients

    Grated coconut
    Fried gram (pottu kadalai) ie dalia
    Green chillies
    Salt
    Asofoedita powder
    Washed pudina leaves

    Grind all the ingredients and saute with mustard seeds and urad dhal.
    In this receipe we really feel the aroma and taste of pudhina.

    With idli's ..... my family loves this pudina Chutney and everytime its a hit....

    1/2 cup fresh grated coconut
    1/2 cup fresh pudina leaves washed
    3-4 green chillies (we prefer spice.... so its ur choice)
    1/2 tsp tamrind paste or water
    1 small clove of Garlic peeled ( if ur clove is a big one .... put only half)
    Salt
    water.

    Grind all of them with little tepid water and just season them with mustard seeds. Try it.

    I prepare like this & my family likes it.
    Ingredients:
    1)Peanuts fryed in a pan (no oil)
    2)Tomatos(2)
    3)green chilies(according to your taste)4 to 5
    4)onion(big=1 or small=2)cut into long slices
    5)tamarind(soak in water for a while)just a small
    6)Pudina(u can also add menthi or cilantron in place of pudina or can add all this)
    7)2 table spoon cooking oil
    8)salt to taste.

    Fry the peanuts lightly in a pan keep a side and fry the chilies,tomatoes(cut into half each),onion sliced,pudina separetly with adding oil.

    grind all the ingredients by adding water little,but add onion sliced fryed in the last, you can add in place of water the tamarind water in which the tamarind soaked.
    If you want to add some more water can add according to the consistent of thickness.
    This chutney will be good with Dosa also.
    Try once feel like to continue when ever you prepare idly or dosa

    We do pudhina chutney in 2 different ways

    1. Grind coconut,pudhina, green chilli and salt with enough water and temper with mustard,split urad dhal, asafoetida and curry leaves...Add very few mint leaves, so that color remains very light (similar to pista ice-cream..the more you add the taste and color differs)..Just tempering no cooking @ all :cheers

    2. Heat oil ...Saute chopped onions(1 big)..Next saute chopped tomatoes(2 medium)...next add a handfull of mint leaves and a small piece of tamaring and saute till the mint leaves shrink well..Add salt and grind...This can be tempered with mustard and urad dhal or avoid tempering

    Power cuts and excellent chutneys…..


    What if you have the ingredients all ready for making chutney and half way through grinding there is power cut?…and the chutney cannot be made in the usual way?
    Here is a splendid way to make excellent chutneys when there is a power cut halfway through…

    No no no going back to ammi stones or olden days..!...
    Try grinding these chutneys the way I say and also the way it is usually done ..ground very fine…you will see the difference in taste..!


    Coconut chutney.
    Ingredients..
    Coconut scraping ..scraped very fine..one cup
    Dry chana or pottukadalai …two tablespoons
    (that you normally use for chutney).
    Green chillies….2 or three
    Coriander leaves chopped fine
    Salt to taste..
    Hing mustard and a little urud dhall

    Grind very fine pottukadalai salt and chillies
    Add coconut scraping and coriander leaves
    Sauté with mustard and a little urud dhall

    Coconut, mint, coriander chutney
    ingredients:
    coconut scraping ..very fine…one cup
    mint a handful washed and chopped fine
    coriander leaves washed and chopped fine
    green chillies 2 or 3
    salt to taste
    grind together coconut green chillies and salt..
    mix mint coriander and other ingredients well
    (sauté with mustard and a little urud dhall ..optional)
    Chutneys with just coriander leaves or mint or curryleaves is just as tasty as the mixed variety.

    Tomato onion chutney
    Tomato ..2
    Onion…1
    Curryleaves..5 or6
    Roasted red chillie…2 or 3
    Salt to taste
    With a little oil toss cut tomatoes cut onion red chillies add salt ..allow to cool
    Just run in the mixie for a min or too…very coarse not smooth..saute with mustard and finely chopped curry leaves..
    You can also add cut coriander leaves and mint leaves to the above chutney for a different taste.

    Tori or ridgegourd chutney
    Ingredients
    Ridge gourd 2
    Urud dhall 2 teaspoons
    Red chillies 2 or 3
    Hing
    Salt to taste
    Coriander leaves for topping
    Wash and remove hard ridge from the gourd ..it is ok if the peel is soft ..the chutney tastes good with it..so just remove the ridge..or lines that are hard.. cut to pieces
    With a little oil roast urud dhall red chillies ..cool and grind with salt and hind to fine powder..remove from mixie transfer to a bowl .
    Cook the ridge gourd in a little oil over low fire with a little salt..cover till it gets almost cooked allow to cool..and mash or mix with hand to make a coarse paste add this to the ground ingredients. top with finely chopped coriander leaves. Add a little water if the chutney is too dry or thick.

    Chow chow chutney
    Ingredients
    Chow chow 2
    Tomato 1
    Onion 1
    Red chillies 2
    Green chilli 1
    Salt to taste
    Coriander leaves
    Peel chow chow cut into pieces and cook in a little oil adding salt mash and set aside
    In a little oil toss tomato pieces red and green chillies onion cut into pieces keep on low fire and when half cooked remove from fire cool..grind fine onion tomato mixture add the mashed chow chow mix well …top it with coriander leaves and sauté with mustard and urud dhall.
    This chutney can also be made only with chow chow peel (when the inside of chow chow is used for some other item like kootu)

    urad dhall-2 tbsp
    red chilly-1
    Green chillies- 2
    Salt
    Asofoedita powder
    pudina leaves- 1cup

    fry it in the oil first 3 ingredientone by one, add pudina fry for few minutes& switch off the stove. Grind all the ingredients and temper with mustard seeds and urad dhal.

    i can do this way. urad dhall, redchillie & chow chow fry it in a oil & grind it in a mixie .chow chow chutney is really superb.thanks for sharing.

    This is how I make my pudina chutney for idli.

    Fry pudina in 1/2 tsp oil till raw smell goes and grind it with green chillies, little ginger, tamarind, 1 or 2 tbsp coconut and 1 or 2 tsp of pottukadalai (chickpea). Season it with mustard and hing. Sometimes I do add raw onion and have it with adai. It tastes good.
