Lentil Soup-8 Servings 2 Tbs olive oil 2 medium onions, chopped 4 cloves garlic, chopped 1 bay leaf 2 stalks of celery, chopped 2 cups dried lentils 2 carrots, chopped 8 cups of water 1 small can tomato paste 4 cups shredded spinach Salt and white pepper to taste 3 Tbs lemon juice Heat oil in a large saucepan and saut onion until soft. Add remaining ingredients except spinach and lemon juice. Mix well. Bring to a boil, cover and simmer 1 hour. Add spinach, salt, and pepper, and cook 10 more minutes. Stir in lemon juice and serve.:coffee
Re: How to prepares a rich nutritious and healthy soup easily That is a good recipe. I generally prepare, chinese hot and sour soup. It has tofu, mushrooms, veggies so it is really yummy and healthy.

Re: How to prepares a rich nutritious and healthy soup easily Ingredients: 6 cups vegetable broth 2 cups mushrooms, sliced (Chinese wood ear mushrooms or shiitake are best) 1 small can bamboo shoots 1 small can water chestnuts 2 tbsp soy sauce 1/2 tsp pepper 1 tsp hot sauce 2 tbsp vinegar 3 cloves garlic, minced 1/2 cup scallions (green onions), sliced 2 tbsp chili oil Preparation: Bring vegetable broth to a simmer and add all the ingredients, except the scallions and chili oil. Allow to simmer for at least 20 minutes. Add the scallions and simmer for about 5 more minutes. Stir in the chili oil. Add additional soy sauce, hot sauce or vinegar to taste. Enjoy your vegetarian Chinese hot and sour soup!
