Pineapple upside down cake was always a family favorite of ours also. My mom did little differently: you preheat the oven and then in the pan you are going to use melt some butter (like 1/2 stick or more) in the oven, take it out and sprinkle brown sugar all over it. Lay your pineapple on top of that and then pour your cake batter over all of it. Anyway, thanks for sharing...pineapple cake is a winner.
