list of basic recipes in indian cooking

    hi friends,

    am new to cooking,i know to cook

    tiffin - iddly,dosai,chappati,puri,ven pongal,semiya,uppuma,idiyappam

    lunch - sambhar,rasam

    non veg - chicken masala, fish fry(with chilli pd and salt),chicken kulumbu

    sweets etc - semiya payasam,rava kesari,paruppu vadai

    plz help me to learn the basic recipes. i like to master in cooking. plz help me friends.

    sure priya....i"ll help you...tell what you to learn....actually before marriage i do't know how to make sambar rasam....but after marriage i bstarted cooking but no one helped....i'm blessed with a one thing that is if i smell or taste a particular item i can tell what r the items added in that dish.i started by trial and error method now i learned almost all the items ....including continental items...
    and i'm the recipe book for my friends and relatives....if you want to do master in cooking you need
    1. interest in learning items
    2.creativity
    3.trial

    hello priya,

    its good to know that you are very much interested in cooking. Before marriage, even i dont know how to cook, being a only girl i am never allowed to cook. but after marriage i started cooking simple dishs and later on i became expert in traditional cooking. My mother never believed that i cooked for 15 members at a time.

    I believe that every women have some basic knowledge about cooking, as we meant for it. there are so many websites (like sulekha), which teaches you, from basic cooking to regional wise and continental wise. Also if you happened to taste any delicious food, never forget to ask recipe from your friends, that way i learned some cooking.

    i am sure that you are going tobe a good chef:cheers

    thx a lot for ur support. i feel so happy on ur reply. thx a lot friends. am sure to become a chef with ur encouragement,kanmani. shini, can u teach me one by one. first teach me to do "more kulumbu"plz. waiting for ur reply.

    hi priya,

    there are 2,3 ways to make more kullambu....i'm also a tamilian..i do both tamil and kerela style...

    more kulambu 1:( for 2)

    grind coconut grated for about 1/4 to 1/2 cup
    little jeera
    garlic 1 or 2 clove or little ginger (what ever you want u can add)
    green chilli to taste
    turmeric (optional)

    method:
    add little water and boil it well.switch off the stove.allow to cool.add thick more(butter milk).salt.
    pour seasoning over it

    for seasoning:
    oil
    mustard seeds
    red chilli
    curry leaves
    asofoetita(perum kayam).
    this is one method.

    tips:
    you can add butter milk with coconut paste but you must be careful otherwise it will spoil.better add after cooling or add b4 serving.
    you can add any veg like cucumber ,fried ladies finger ,pineapple or carrot.

    more kkulambu 2:

    this is the method which hotels are doing
    very simple...if you are making sambar ,dals then you can do this gravy along with it.

    method:
    heat oil add mustard, fenugreek,curry leaves,red chilli,asofoetita,and chopped or sliced onion.fry it well add turmeric pd salt then add butter milk.heat it do't boil it.

    tips:
    in this method also u can add butter milk after switch off the stove.

    more kulambu 3:

    to powder:
    channa dal 2 tsp
    red chilli to taste
    coriander seeds 2 tsp
    fenugreek little
    jeera little

    dry fry all the above in the kadai powder it.add turmeric pd and salt.mix it in the butter milk.heat it (do't boil it).add seasoning.

    i give u another recipe to accompany with this more kulambu...

    yam fry 1:

    slice the yam into a thick piece like fish slice.cook it till tender.
    make seasoning with jeera or mustard,add very finely chopped onion fry it well till golden brown.add chilli pd dhania pd,turmeric pd.fry it.add 1/2 cup water and salt.add cooked yam slice.fry well till dry and dark brown.sprinkle little garam masala...

    this goes well with more kulambu.

    yam fry 2:
    slice the yam into a thin slice.half cook the yam.
    put chilli pd,turmeric pd salt into the yam.marinate it for 10 mins.put little oil in a kadai.put yam slices.shallow fry the yam till brown.this should be eaten hot.
