Here is the lentil spinach soup.. All you need is spinach and lentil to make it. It's yummy for sure. We make it for dinner at home.
Ingredients: Spinach - 1 cup Lentil - brown lentil Onion - 1/4 cup Oil - 1 tea spoon Salt - to taste Whole black pepper - 1 tea spoon Water - 3 cups Directions: Saute the onion in oil until they turn gold brown Add spinach, whole black pepper, and salt and saute for another 2-3 minutes Combine sauteed mix with lentil and add 3 cups of water Cook for 15 minutes until the lentil is fully cooked (you can also pressure cook or slow cook it) Once the soup mix is ready, blend everything in a blender/mixie Serve hot with bread or roti Hubby is not a spinach fan. Even he liked this soup for dinner. So I consider this recipe a winner
Vegetable Broth Soupy Pasta: Ingredients Required: Pasta : 1 cup Vegetable broth : any veggies of your choice ( I used boiled peas and carrot broth here) carrot - few slices finely chopped pepper powder - freshly grounded curry leaves - finely chopped salt optional - as per your taste How to make : This is a simple and healthy recipe. 1) Cook the paste as per instructions, drain and wash it with cold water. keep it aside. 2) In another pan, add 1 tsp of olive oil, add finely chopped curry leaves , cooked pasta, vegetable broth. 3) Once the broth starts boiling, finally add carrot pieces, pepper powder and salt as per your taste. Note: I recommend freshly ground pepper powder than store bought ones. Newly grinded would have the hotness. While boiling the veggies in pressure cooker, most of them discard the broth and it can be used for soups which is healthy. Before adding veggies in cooker, cleanse it with plain water. I don't add salt, but if you prefer you could add salt to the soups.
