Ingredients 2 cups fresh curds chilled 1 tbsp. sugar 1/2 tsp. cardamom 8-10 strands saffron 2 drops vanilla essence 1/2 cup crushed ice 1 tsp. hot milk Method: Soak saffron in 1 tsp. and rub till dissolved. Mix sugar in curds till well dissolved. Just before serving combine all ingredients. Whip well with a hand beater or electric beater. The lassi is ready when it is light and frothy. Serve well chilled.

Neermor with Nelli flavour: Grind cut-pieces of 1 or 2 gooseberry (nellikkai) with 1 green chilly, a few curry leaves, a few coriander leaves , two spoonsful of shredded coconut with a little water in the mixie.Mix the paste with a pinch of asafoetida and salt with churned and diluted butter-milk.This can be used as a drink. If the same paste is mixed with curd instead of buttermilk and then seasoned with mustard seeds , it is "Nellikai Pachadi" , a side dish for lunch.

Can sprinkle with a little cardamom. The lassi can be kept refrigerated for up to 24 hours. Makes about 2 cups.
Wow all lassis looks great.............. I have butter milk everyday as it is very hot here will try these spicy ones I usually just put jeera powder salt and pudina powder in butter milk and have it I make this mango lassi it is real yummy here i make with tin mangoes.
