Hi Krish, I tried the oats chapati and it came out very good. I also add usually, peeled and mashed avocado to the atta before needing. Avocado has good fat and the chapatis come out very soft. Cheers

The reason for the colour (absence/presence), is Safron and not Jaggery. Did you try adding Safron? If so, did you add it before bringing to boil? When you bring this to a boil, Safron will bring color to Payasam.

If you use kesar color, you will get only the color. But not the taste (as you might expect from the photo ). For best results, use saffron.
