    Dear Friends,

    No matter Where we live....How much we love to taste various cuisines......
    We crave for our own Indian food and with the available veggies and produce here in the U.S., we tend to fit them into our own cuisine......:yes:

    Let us share our:idea ideas here, so that we can have a repertoire of our own 'Indian recipes with the produce available in U.S.'

    One of my friends, makes curry with Kale leaves.. it tastes the same as Thotakura (Amaranth leaves) curry..
    I havent tried it my self though... planning to make it soon...

    Keerai masiyal.. with all types of green here..
    Tastes good wit Kale, with the right balance of spicy red chillies and Garlic

    Pumpkin sambar, spicy chutney,halwa.. esp during halloween season ;)
    pumpkin seeds roasted with masalas is a good snack

    Bell pepper chutney
    Purple cabbage kootu
    Zucchini lime salad
    Avocado rotis
    Green brinjal curry
    Broccoli poriyal
    turnip radish poriyal
    surakkai[lauki] chutney, subzi

    And the list is still growing :)
    I love to cook and eat as well.. trying to sneak nutrition in all forms

    Wow, this thread is going to be very useful to me. I still have not tried out many US veggies, but now I'm bored of the same old Indian veggies. I want to try new vegetables but don't know if I will like new tastes, so want to stay safe with Indian dishes. I'll pick up some new veggies next time I go to Farmer's market and definitely try the recipes listed here. I have actually tried only Broccoli fry till now.

    Shreya.. try it..u will love it
    just mash 1 ripe avocado into chapati dough
    and voila.. softest rotis wit minimum effort :)

    I made it twice or thrice.. its our favorite.. my DH never likes avocado..
    so I sneaked it this way, and he didnt even get a hint of it :D
    there are diff versions of the recipe
    i followed this simple one

    With my brother visiting me in a week, even I was cracking my head with what recipes to try
    Now I recollected some of it
