I think the tittle says it all :drowning I have an IFB S20 I have been trying and trying to bake a flawless cake for the past one year!(i know i didn want to give up) and now i am frustrated trying. The cake is too hard on the top like a candy!! but the center is always undercooked First i tried with ready made mixes then the recipes from internet both have the same aftermath! its so hard on the top like a sugar candy. but when i insert the toothpic its sticky if i bake for longer it flops in the middle I bake in convection mode. I do not open it often to check the doneness! :spin Its half kg cake aprox each time and i bake for 25 min first I use the temperature of 180 deg C. then check bake for 10 more minutes still is gooey in center! I use aluminium baking tins. I bake in the lower circular glass place only. kindly help by suggesting where I am going wrong!:hide:
I don't know whats wrong with your recipe, so cannot help you. But lets wait for a day for help, otherwise I'll move this query to Ask ChitVish Forum, OK?
Am not expert too.. but my immediate thoughts were the oven temperature could be very high. Even though the settings say 180, probably your oven is getting more hotter than 180. Try using an oven thermometer and check it out.. Or experiment by lowering the temperature further.. Also, all your ingredients HAVE to be in room temperature. If you are taking milk & egg from the fridge make sure they are out for atleast 60-90 mins. there are few more tips worth sharing. 1. Keep the oven in the bottom rack of the oven. 2. Check if the oven is in "Bake" mode and not "Broil" mode. (ie, the coil that heats up need to be at the bottom of the oven (& not the top). 3. If it still hardens on top alone, try placing an Aluminium foil on the top of the pan, to reduce the heat on top. Hope the tips help. If you worked it out, please share what you followed. Cheers, JM

I am baking on convection oven so i am not able to follow the coil tip you mentioned. I am gona try it today itself My parents are coming today and I want to surprise them with the cake (if it turns out well) I want to desperately bake a perfect cake as i want to make home made cake for my son's first birthday
I always try to bake an eggless cake. We are not used to eating eggs. I make sure all ingredients are in room temperature Additionally i read a few other threads before i posted this query. Some of them even had problem with the convection mode in their ovens. Is that possible ? how do we find out ?
after baking transfer the cake immediately from the baking pan to some other flat surface for cooling. otherwise, the bottom will be wet

Mix the curds, milk, essence, and butter. > 2. Beat in the dry ingredients together to form a smooth slack > mixture. > 3. Pour into two greased and dusted 225 mm. (9") diameter tins > and bake in a moderately hot oven at 190 degree C (375 degree F) > for 35 to 40 minutes. Cool. > > > For the icing > > 1. Mix the sugar, butter, cocoa and milk. > 2. Also please note that you should not open the oven door to check if the cake is baked as the cake will not get baked properly. Open the door only after the 35 - 40 mins as mentioned in the recipie. That is why your cakes don't seem to get cooked on the inside.
