Frozen mango pie

    Was gifted a flat of mangoes that are all ripe at once so scrambling to use them. Came up with the following recipe:

    375ml mango pieces and juice (or a little more)
    3 t sugar or to taste
    125 ml curd (fresh not sour curd) (or you could use cream or milk)
    4 oz of cream cheese
    one half 8 oz tub of thawed Cool Whip (or use 250 ml of stiffly whipped cream)
    1 premade graham cracker pie shell
    some toasted nuts or other garnish for top (I used some dry roasted salted peanuts powdered)

    In a blender, puree the mango, sugar and curd. Add the cream cheese in chunks and puree. Check the sweetness. Fold in the Cool Whip. Put in the graham cracker crust and garnish the top with nuts or other garnish. Cover with the cover that comes with the pie shell and freeze.

    Warning: I have not tried it frozen but I am sure its going to be ok. I plan to serve as ice cream pie. You can also forget the pie shell and layer this with fruit and/or cookie crumbs for parfaits.
