I came across an article in the newspaper which I would like share it with you all. The sweet meat enriched with vitaminA and anti oxidants better known as the herbal rasgullah has been prepared by the food technology department of Jadavpur university of Calcutta. Carrots are a good source of carotene compound ,an active anti oxidant required in large amounts by the body among all age groups.The herbal rasgullahs can fight diseases like mal nutrition,cancer ,cholosterol and slow ageing process.Foods mixed with anti oxidants are in great demand in western countries..They are also a cheaper alternative to medicinal vitamin supplements. The herbal rasgullah is prepared by mixing equal amount of carrot paste and cottage cheese with baking soda rava and malto dextrine. It does not require high technology and can be made on a small scale. They not have artificial colours as the colouringis from the carotene paste. The University is training entrepreneurs in manufacturing. The scientists also plan to launch natural carotene in paste and powder form,as artificial ones are costly .
