    According to Mexican culinary terminology, Salsa cannot be ref as a sauce. In Indian terms it can be called as a chutney (as in roasted tomato salsa), or like a Koshimbiri (as in a fresh tomato/mango or any other fruit salsa). Sauce in international culinary terminology, is close to a gravy but more concentrated or thickened with flour.

    Grilled Chicken Entry

    Quick and Easy Grilled Chicken Kebabs
    2 Chicken breasts
    1 Packet Parampara Chicken Tikka Masala
    1 Tbsp Ginger Garlic Paste
    1 Tbsp Tandoori Masala
    2 Tbsp of Yogurt (Keep the yogurt in a sieve to drain excess water)
    6 Wooden skewers (Soaked in water for 30 mins)

    Method
    1. Cut the chicken breasts into 1 inch cubes.
    2. Make a paste by mixing Ginger garlic paste, Tikka Masala, Tandoori Masala and Dahi.
    3. Add salt if reqd. and marinate the Chicken pieces at least for 4 - 5 hours in this masala. Place the mixture in the fridge while it marinates
    4. Thread the marinated chicken pieces onto the skewers.
    5. Once the Grill is hot, place the skewers. Let the kebabs fry on both sides until they cook. Occasionally baste with some marinade to avoid drying the meat.
    6. Serve the kebabs with mint chutney or mint yogurt.

    Culinary contest

    It’s my research and success version of healthier desi burger which is loved by my kids and other family members. Hope u all too enjoy it.


    Healthier Desi burger.

    Ingredients (makes 4)

    Paneer grated – 50 gms , Soya chunks or granules - 1 fist, Potato - 1 ,Sprouts – 50 gms, Ginger garlic paste – 1 spoon, Onion chopped – 1, Green chilli paste – ½ spoon
    Chat masala – ½ spoon, Egg 1 or cornflour for binding, oil – 3 spoons, bread crumbs – 1 fist, Salt to taste.

    Preparation
    Place a nonstick pan and heat 2 spoons of oil, Add chopped onions and ginger garlic paste, green chilli paste and sauté. Now add boiled mashed potato, sprouts, boiled and drained soya granules. (if soya chunks boil, drain and grind coarsely), and paneer grated sauté all the above. Now add chat masala and salt to taste and transfer to a plate, Wait until it gets cool. When cooled add 1 egg or a 2 spoons of corn flour and bind it to make a ball. Press the ball to a flat burger shape and dip in the bread crumbs(due to the moisture in the mixture the bread crumbs ll not spill no need to dip in egg or maida paste) and grill it in a griddle with a spoon of oil. Now the burger is ready.

    To make desi burger bun. Or we can use normal burger bun too .

    Idly – 1 , corn flour – 1 spoon, rava - ½ spoon , oil – 1 spoon, salt – 1 pinch.

    Preparation :-

    Cut Idly into 2 or 3 round pieces. Mix corn flour, rava , salt with water and make a paste. Now dip the Idly pieces into the paste and grill it in a griddle with 1 spoon of oil.

    Arrange the burger with a piece of lettuce or cabbage, tomato slice , cheese slice. Serve the burger with hot chill garlic chutney.

    Grilled Chicken Salad
    Ingredients :

    Chicken breasts ( boneless) - 1or 2
    Vegetables of your choice - I used red & yellow capsicums, cherry tomatoes, onions, green & red cabbage, salad leaves
    Lemon Juice - 1 lemon

    For marination -
    lemon juice - 1 lemon
    Vinegar - 2 tablespoon
    Garam masala - 1 teaspoon
    red chilly powder - 1 teaspoon
    Coriander powder - 1 teaspoon
    Salt - 1 tablespoon
    Oil - 2 tablespoon

    Method :

    Wash and remove extra tit bits from the chicken breasts. Make slits on one side. Prepare a marination using all the ingredients given in " for marination". Rub this marination on the chicken pieces. let it marinate for 2- 3hrs.

    Preheat oven at 180 degrees and put the marinated chicken breast for grilling giving 6 minutes on each side at 160 degrees. On a serving plate, place salad leaves, cherry tomatoes cut in halves, grated green & red cabbage, red& yellow capsicum cut in squares, onions cut in rings. Sprinkle lemon juice and salt all over the veggies . Cut the grilled chicken breasts in slant and place in the center of the salad. sprinkle some lemon juice over the chicken.

    Serve at room temperature or cold.
