    Eggless Walnut Bonbons - melt in the mouth variety!

    Butter - 1 cup

    Brown sugar - 1/3 cup

    Vanilla essence - 1 teaspoon

    Maida - 2 cups

    Finely chopped walnuts - 2 cups

    Powdered sugar - to drege

    Cream butter and sugar together.

    Add flour, vanilla and nuts.

    Roll into walnut sized balls onto a greased cookie sheet and lightly flatten.

    Bake at 400° for 10 minutes.

    Remove from oven, place on waxed paper and sprinkle with or roll in powdered sugar.

    Jeera crackers - munch when hunger strikes!

    Mix together to a firm dough:

    Wheat flour - ¾ cup

    Cornflour - 1 ½ tsp

    Makai ka atta- 2 tbsp (yellow coarse corn flour)

    Skim milk powder - 2 tsp

    Oats - ¼ cup

    Jeera - 1 tsp

    Curds - 1 tbsp

    Salt

    Knead ill smooth.

    Using wheat flour, roll to 2 mm thickness.

    Pierce with a fork & cut to 2” squares. Any shape is fine.

    Place on a greased baking tray & bake at 160 deg C for 20 mtes, till light brown & crisp.

    Cool & store airtight. This is ideal for dieters, but not crunchy, only munchy!!

    Fresh Ginger Cookies - very flavourful.

    Maida - 1 cup

    Butter, sugar, each - ¼ cup

    Cooking soda - ¼ tsp

    Cinnamon powder - ½ tsp

    Grated ginger - 2 tbsp

    Salt - a pinch

    Beat sugar & butter.

    Add flour sieved with soda & cinnamon powder & finally ginger.

    Pat into small discs.

    Bake at 160 deg c – 15 mts or till golden

    Baked Tomato Slices - ideal for a light, healthy lunch or dinner

    Tomatoes - 4, sliced

    Low calorie white sauce - 1 cup (refer to Diet Au Gratin )

    Grated low-fat cheese or paneer - 1 tbsp

    Boiled corn - for topping

    Arrange tomato slices in a baking dish & sprinkle salt & pepper.

    Spreadwhite sauce over it & sprinkle paneer or cheese & corn over it.

    Bake at 220 deg C for 10 mtes.

    Serve hot.

    Molasses Cookies - Crispy textured

    We do not get molasses in Chennai. So, I added 2 oz of palm jaggery (karuppatti) to 2 tbsp of water & simmered to dissolve. One can substitute plain jaggery or use honey instead.

    Ghee - 2 oz – 60gms

    Sugar - 3 ½ oz – 100 gms

    Molasses - 2 oz – 60 gms

    Maida - 8 oz – 250 gms

    Bakng powder - 2 tsp

    Cinnamon, ginger powders - 1 tsp, each

    Clove powder - ½ tsp

    White vinegar - 2 tbsp

    Sieve dry ingredients together.

    Melt ghee, molasses & sugar over low heat.

    Add dry mixture to the cooled molasses mixture.

    Stir in vinegar.

    Form balls & keep on greased baking trays.

    Bake at 375 deg F for 10-12 mts.

    Makes around 3 dozs.

    Oats and Raisin biscuits - healthy & tasty.

    Mix together:

    Oats - ¾ cup

    Wheat flour - ¼ cup

    Raisins - ¼ cup

    Low fat milk - 2 tbsp

    Brown sugar - ¼ cup

    Oil - 1 tbsp

    Divide into 9 portions.

    Place a butter paper in a greased baking tray.

    Place the balls & flatten each round with the back of a fork.

    Bake at 180 deg C for 20 mts or till baked.

    Peel them off the baking tray and cool.

    Store airtight.

    Though appearing soft when hot, once cooled down, they will become crisp.

    50-50 Hot-Sweet Cookies - Call it, peanut Butter cookies.

    Beat together:

    Plain butter & peanut butter, each - ¼ cup

    Honey - 1 tbsp

    chilli flakes - 1 tsp

    Salt

    When well blended, add

    Maida - 1 cup

    Baking powder - ½ tsp

    Make a dough; pinch small balls.

    Keep each inside a small bangle & press to form a circle.

    Press roasted & split peanuts on top.

    Bake in a greased tray at 160 deg C for 20 mtes.

    Cool, remove & store airtight.
    You can omit chilli flakes & a pinch more of salt, as well.

    Eggless Pinacolada Cake - yes, pineapple & coconut combine here!!

    This is a very attractive looking cake, too!

    Sieve together:

    Maida - 100 gms

    Baking powder - 1 tsp

    Cooking soda - ¼ tsp

    Beat together:

    Condensed milk - 130 gms

    Soft butter - 50 gms

    Next, add:

    Desiccated coconut - 50 gms

    Sieved ingredients

    Gently fold them together, using

    Pineapple juice - about 100-120 ml ( I used a readily available carton)

    Till a soft dropping consistency is reached.

    I used a ring tin. Any baking tin can be used. Grease thoroughly.

    Arrange a few canned pineapple cubes & glaced cherries at the bottom.

    Pour the batter over.

    Bake in a pre heated oven at 180 deg C for 25 mtes or till done.

    Eggless Chocolate Cup cakes - hrdly takes time!!

    Sieve together:

    Milk powder - 2 tbsp

    Maida - 4 tbsp

    Baking powder & soda, each - ½ tsp

    Cocoa powder - 1 tsp

    Mix with a wire whisk:

    Condensed milk - 2 tbsp

    Butter - 1 tbsp

    Add the sieved dry ingredients and


    Grated dark chocolate - 2 tbsp

    Finally add 40-50 ml milk to get a dropping consistency.

    Fill 12 small muffin tins lined with paper cups.

    Bake at 160 deg C for 10-12 mtes or till done.

    Remove & cool.

    Make swirls on top with butter icing using a big star nozzle.

    Sprinkle & keep a jelly sweet or decorate to your choice.

    Eggless Fruit & Nut Muffin - less sugar; ideal for “ our daily cake”!

    Sieve together:

    Maida - ½ cup

    Soda & baking powder - each, ½ tsp, level

    Beat together:

    Icing sugar - ¼ cup

    Butter - 1 tbsp

    Vanilla essence - 1 tsp

    Mashed banana/apple - 1/3 cup

    Curds - 3 tbsp

    Chopped & Mixed nuts (almond+cashew+ walnuts) - 2 tbsp

    When well mixed, add dry ingredients.

    Spoon into 8 muffin cups.

    Bake in a preheated oven at 160 deg C for 25 mtes.
