Here is my cake recipe. My MIL gave me the recipe but I made some changes in the making process. 1. butter - 3/4 cup ( at room temperature. don't melt ) 2. sugar - 3/4 cup 3. Egg - 3/4 cup 4. All-purpose(Maida) - 1 cup 5. Baking Powder - 1/2 tsp 6. Baking Soda - 1/2 tsp 7. Salt - small pinch 8. Cardamom (powdered) - 1 Tbs ( up to your taste) 9. Nuts - cashews crushed + Raison + dates ( what ever you like) 10. brown color - I use caramelized sugar. ( it should be cold when you add it into the cake mix) 11. Vanilla - 1 Tbs 1. Sift together the flour, baking powder, baking soda, salt and keep it aside 2. Beat butter and sugar until it is fluffy. Add the eggs one at a time and beat it until it is really fluffy. If it doesn't look fluffy, your cake is not going to be soft. Now add the vanilla and the color and just beat for few seconds. Beating part is done. Add the flour mix, cardamom, nuts mixture into the egg mix . Just fold it in the Egg mixe. Don't over mix/beat. Pour the mixture into a buttered round / square baking pan and bake it at 350F for 35 - 45 minutes.
