    Hi Chithra,

    1) Is there any way of rescuing dishes like upma / sundal etc. from an overdose of salt ?? One occassion, I made more upma without any salt, mixed with the salty ones and got a whole mass --- which was ok, but texture [​IMG] was terrible !

    2) How to use marshmallows ?

    3)Can you give the proportion & method to make ginger-garlic paste ? How long can it be stored in the fridge ?

    4) For a child who has milk allergy, how to include 'sathu maavu' in his diet ? Can we make chapathi, dosai etc. -- if so, can you please give proportion / method ?

    One by one, KK!

    Dear Revathy,
    1 - for no salt, add little table salt to 2 tsp boiling water & mix to the whole lot thoroughly. Excess salt cannot be repaired as far as I know.
    2 - I do not use marshmallows - may be somebody else can answer this.
    3 - Grind 50 gms each of ginger & garlic with a tsp of salt, using vinegar. Keeps for 2 weeks easily.
    4 - Sathu mavu - if not milk, I think buttermilk is the only option. To 1 cup of any dough ( dosa or chappathi ) add 1 tbsp of the same.

    sorry to interrupt...

    Sathu maavu can be included in our diet by making sweet dosa with jaggery water, dry fruits like cashew, badham or dates or prepare ADAI by making thick dough and pat them on tava w/w.o ghee. That will also taste very good .

    Another option is making laddu by making sugar or jaggery syrup alongwith dry fruits and make urundais. Adding ghee is optl.

    My friend has come back. She gave their recipe for avial thus. Boil avial vegs( Drumstick is a must). Grind saunf, jeera, kuskus, green chillies & coconut. Add the paste, simmer & remove. She says it will taste more like kurma. There is no sour taste in it. If you try it, let me know.
