Aam Ki Subzi INGREDIENTS 1 tsp whole cumin 1/4 tsp asafoetida powder 2 tsp coriander powder 1/2 tsp turmeric powder 1 tsp red chilli powder salt to taste 1 kg small ripe mangoes 2-3 glasses water Oil or ghee to shallow fry METHOD Squeeze the mangoes to get the pulp. Retain the pip and keep aside. Heat ghee in a pan, splutter cumin for a few seconds. Add asafoetida and stir-fry. Now, add coriander powder, turmeric powder, red chilli and salt and stir-fry for a minute or two. Sprinkle some water in case the spice mixture sticks to the bottom of the pan. Pour over the mango pulp and stir for few more minutes. Finally add water and cook till it thickens a little. Serve with rice.
