    Dear Karthiga,

I have the recipe , you asked for 'Aatukaal Paya' from Mano Saminathan.

I'll post the recipe in my thread . Mano alos told me that the recipe is not from Chettinadu , it is the recipe of the tamil Muslim people of Chennai origin. It has also been published at the Forumhub mayyam thread by Mano Saminathan.

    Dear Heena,

Sorry for being late in replying. Suddenly I had lots to do at ammas. That's why I was late. I have posted the recipe at my recipe thread.
The restaurant people don't care about our health or obesity. They cook the entire recipe in butter.
Then they don't fry onions daily. They deep fry it in oil and keep them stored. That is what I learned when I was in Delhi.
We can also do that. Slice onions finely and deep fry them in oil. Drain out on a paper ot towel. Store them in a bottle. You can also refirigerate for a longer period.
When you need onion paste for a recipe like this just blend it well in a mixie with other masalas.
    Love
