How could we incorporate more vegetables in our diet?

    My dear ladies,

    Normally I buy all the fourteen vegetables at once,may be one of each kind.I chop it in the food processor in tiny pieces and store in several one serving baggies and freeze it so I could use it instantly and generously in any recipe.

    @Bhavna- I would love to try zuccini in roti...never tried that. In summer I have more zuccini's than I (neighbors/ friends) know what to do with.

    Another iead i like is making the rori/ parantha dough with ripe avocado. Extremely healthy and no oil needed at all. Rotis will be super soft and yummy :)

    Using Avocado in paratha is a good option too.Thank you for the tip.

    I make home made guacamole by adding green bell pepper, scallion etc.

    Love all your tips. One suggestion, it is not healthy to cut and store veggies in freezer as it looses all its nutrients. So the purpose of having it is lost

    Thank you for your feedback.

    I would love to use fresh vegetables over frozen vegetables however studies have shown that frozen vegetable do retain their nutrients.

    Here in USA we could go to buy vegetable once a week. After 2-3 days vegetables do lose their freshness.
    Being working women it is not easy to spend too much time in the kitchen. So we got to look for easy, quick and healthy options.

    I love this kind of interactions. Please stay involved in this thread.

By the time you consume frozen vegetables, the nutritional content is similar to that of fresh or canned vegetables, and the minerals, fiber[​IMG], fat, protein and carbohydrate content is the same as before harvest. Nutrient loss depends on the process and the vegetable.

    Saves time.

    Will definitely try the other varieties & let you know.

    I like adding avocados to green salad ( spring mix, cucumber, spring onion, bell pepper , tomatoes & avocado )
    I usually pack this green salad for Lunch with olive oil & salt dressing.

    I mix veggies for Rava Upma too.

    Try adding beans like green peas or Val dhal to yellow rice ( chitranna)

    I add spinach in parantha dough..and sometime daal.
    I make green salad in night..sometime homemade veggi+fruit juice
