Caramelise the sugar. Add hot water. (while adding hot water - add a small amt at a time, say 1/4 cup. cause the caramel is already hot and adding hot water will cause bubbling / boiling and need to be careful. Use a lengthier spatula to mix) Remove from the stove and add butter, dates and nuts. just cool a bit & add 2 beaten eggs followed by vanilla essence 1 tsp. mix well. For extra flavour add powdered cinnamon 1/4 tsp and grated nutmeg 1/4 tsp. mix well. Finally add sieved maida and baking soda mixture. mix well. Bake in a pre-heated oven for 40 mins at 180 deg C. or till done. The caramel gives a beautiful sheen & tastes divine. Try it out. you'll like it.

For all those kids who don't touch dates, this is the best way to feed them dates and nuts. My Daughter when younger, never liked dates but would eagerly wait to eat this cake. Love, M
