    Nila,

This is another instant curry made out of brinjal..very simple and tasty

Tastes great with those lengthy green colored brinjals(other varieties are also good)

1.Slit them into four long slices
2.Mix enough of plain chilli powder, tamarind extract and salt with little water.Should not be thick nor very watery.
3.Marinate brijal in thsi mixture for 10-15 minutes or keep it in freezer for few minutes.
4.Heat little oil in a pan and shallow fry :thumbsup.Goes well with lemon rice or curd rice :)

I got this from a tamil muslim aunty

    Ingredients:

1)Small sized Brinjals- 1/4 kg approx

2)Tomatoes- 2 -(Dice them into small pieces)

    3)Pepper -5/6

4)Roasted peanut and Sesame seeds Powder – 4 tsp approx

    5)Cumin seed powder – 1/2 tsp

    6)Tamarind – a small ball

    7)Salt -pinch/according to taste

    8)Curry leaves -few

    9)Chilli powder

    Method:

1)Heat the kadai with oil(a larger amount than used for normal frying)

2)Once hot, add pepper whole ones…after that….add curry leaves, brinjals and tomatoes and saute them

3)Close the kadai with a lid for around 5 mins…..the ingredients get cooked

4)After that add chill powder, roasted peanut powder, tamarind extract, salt.

5)After that, add water as per requirement.

    6) Allow it to boil until everything gets cooked and the dish gets a gravy consistency.
