    I Would Like To Know A Soft Idly Recipe(only With Urad Dal And Idly Rava) And Also Tasty No Onion, No Garlic Recipes So That It Would Be Very Much Helful To Our Ladies In This Sravanamasam

    Dear Chitra,

    I tried malai kofta the other day.. I am not sure what mistake I made, but the koftas started going to pieces once they were getting cooked in the oil. The ball became smaller and smaller as it got cooked. I smeared cornfloor on the remaining ones and saved the remaining batches somehow, though.. Do you have any idea why this might have happened ?

    Dear Spadhana,
    Thankyou for your compliment.
    For idlis with idli rava:
    Mix 3 cups idli rava with just enough warm water & salt. Mix & keep for 30 mts. In the meanwhile, grind soaked urad very fine. Just before removing it, add the soaked rava, grind just to blend them & remove. Allow to ferment & make idlis the usual way.
    For urad
    1 - either wash just once, soak in just enough water & keep in the fridge, take out & grind directly
    Or
    2 - soak in water for 30 mts, drain for minimum 1 hr & grind.
    Both these methods give fluffy dhal.
    For jain (no onion & no garlic) recipes, go through both pages of my

    fully. You will come across many.
    Sorry for the delay in replying. My system encountered a major problem & had to be taken for repair. It came back only at 10.30 last night !

    The recipe for a "hot" V K podi is

    Tur dhal – 1 cup
    Bengal gram dhal – 1 cup
    Urad dhal – 1 cup
    Red ch - 1 cup
    Pepper ¾ cup
    Curry leaves

    Dry roast & powder.

    Dear Gayathri,
    The koftas break if there is not enough binding ingredient. You must add a little more cornflour, to keep the balls intact. Always for any kofta, test fry one & make sure there is no breakage. Then proceed. Smearing is not enough but kneading some more into the kofta ingredients is necessary.

    I am in need of an authentic spicy Garlic pickle.. I am newly married and my hubby and me luv garlic.. So wanted to try my hands in pickling garlic..
