Hey friends, I am starting this thread to post all the recipes of North karnataka, meaning, Hubli, Dharwad, Bijapur, Gulbarga, etc. If I know any speaciality of that place I will write that also... Please try them at home and let me know how they came out...:thumbsup
1) Jhunaka: Ingredients: Besan flour- 1/2 cup Water-3 cups Onions cut-1/2 cup Green chilli cut-2 Coriander leaves Salt Lime juice Grated coconut Water Oil for seasoning Mustard, jeera, karipatta, urad dal, gram dal Method: Make a seasoning, by putting 2 tb.spoon of oil in a pan. Add Mustard, jeera, haldi, karipatta. Add urad dal and gram dal each 1 t sp. Add onions, and green chilli. Fry for 3 minutes. Add the water. Add salt accordingly. When the water starts boiling, add the gram flour (besan) inot boiing water from hand, taking care no lumps are formed. 1 or 2 lumps are OK. Make the gas sim. Let it cook for 3 minutes. Put the gas off, and add 1 sp. lemon juice. Add 1 sp. sugar. Garnish with coriander leaves. This serves for 2-3 people, and can be eaten with chapati, roti, rice, poori,,, etc. Tastes best with: POORI and JAWAR ROTI.
Mudde Palya: Ingredients: Methi leaves/palak leaves-washed and chopped finely- 1 bunch Toor dal-1 cup-boiled and mashed. Tamarind juice-4-5 tb.sp Jaggery-1t sp. Green chilli paste- 1 sp. salt to taste garlic flakes- crashed- 1 t.sp. Groundnuts-handful Method: Take a pan, put the boiled and mashed dal into it, put o the stove. Add little water (around 1/2 cup). Add the cut methi leaves. Leave it to boil until the leaves get cooked. Now add garlic, tamarind juice, jaggery. Make seasoning and add mustard, jeera, karipatta, and add groundnuts, fry them nicely. Add Green chilli paste. Put this seasoning into the dal pan. Mix it, and put the stove off. Bisi bisi mudde palya READY!!! Try it with Rice, and also with chapati, But mainly with rice.

Wonderful idea. Can you please let us the difference between north and South of Karnataka foods. I am ignorant about the food form that place. I would love to learn and try the dishes too. Good luck.
Hi Soumedh, Naanu huttiddu hubli yalle, same pinch! and i love hubli... But naanu bengaloorige bandu tumbaa varsha aaitu... Studied in bangalore itself... But at house we speak our side kannada only,,, and i know all dishes starting from bhakri from our side.. Delighted to see someone from hubli!!
