Need baigan thalapakattu briyani side dish recipe

    Actually i saw this recipe in Chef Damodharan's show. I tried it came out very well. :cheers
    Ingredients

    Brinjal - 1/4 kg, onion - 1cup, tomato-1cup, green chilli-2 nos, ginger garlic paste- 1spoon, red chillies -2, Chilli pdr-1 spoon, coriander pdr-2spoon, salt, mustard- 1/2 spoon, Ground nut or sesame seeds pdr- 2 spoons, coriander , curry leaves, oil .

    Preparation

    Pour oil in a pan heat and temper mustard, curry leaves, red chillies 2 nos, and add Onions and saute now add ginger garlic paste 1spoon and saute, add brinjal and add salt it help brinjal to saute soon this is my mom's advice. add tomatoes and green chilles, add chilli pdr, coriander pdr, turmeric pdr add 1/2 cup water to it and cook well, Last but not least add groundnut pdr or sesame pdr 2 spoons to the semi it gives a good flavour. squeeze 1/2 a lemon to it garnish with coriander leaves and serve

    Chef made Ambur white mutton briyani(Guska) with i too tried it with this it came out very well. :biglaugh

    Actually you need receipe for this white briyani which is called a guska or you want for Briyani please reply have 2 of those.

    Receipe for Ambur white Briyani (guska):cheers
    Ingredients

    Basmathi rice – 2cups, Mutton – ½ kg , curd – 1cup, Onion – 3 sliced, Green chillies,- 5
    Ginger garlic paste- 3 spoons, Cinnamon, cloves, elaichi, marathi moggu, japathri bay leaves, each 2 pieces, Mint – 1 bunch, coriander leaves, Oil and ghee mixed– ½ cup

    Preparation

    Place a cooker and heat add oil and ghee now add all the spices one by one cinnamon cloves, elachi etc etc and add onions and sauté to be transparent, add Mutton and sauté to change its colour to half white almost it will be ½ cooked, now add green chillies and ginger garlic paste
    And a cup of curd and sauté and add the basmathi rice soaked for 10 mins to it and sauté it add 3 cups of water and add salt (I usually measure 1 spoon for 1 cup rice). Close the cooker lid put on the pressure weight and wait for 3 whistles. simmer the stoves for 5 mins and open after pressure releases and garnish with coriander leaves and serve.
