    Dear All DI'ldies,

    Hope all of you are having a good time in Dubai! As Ramadan is approaching next month, can somebody suggest me some quick ramadan snacks receipes! I will be grateful!
    P.S. I have been in Dubai since childhood and Mom was with me even after my marriage hence was not into cooking so much! Now with two children at home and a full time woking lady, i will appreciate if i get some good receipes from all my friends here!

    first of all ramzan mubarak.
    for iftar i make 2 varieties of bondas.sweet & hot.

    receipe
    ingredients
    1.urad dal-1glass
    2.rice-1glass
    3.gud/jaggery-100gms
    4.chana dal-100gms
    5.elachi

    soak the dal and rice for about 6hrs.grind it by adding 1Tbs of salt and some water.the consistency of the batter should be thick.leave the batter for fermentation through out the night.

    Hot bondas
    heat the oil in kadai.make round balls from the batter and deep fry them. serve with peanut chutney and rawonions.

    Sweet bondas
    .make the jaggery syrup,filter it and add to chana l.preesure cook the chana dal in coooker for 2 whistles.Make the jaggery syrup,filter it and add it to dal.cook the dal for 10 12 minor until the dal becomes soft.make small balls .dip this balls in the urad dal batter and deep fry them.

    hi to all ladies.
    here r a few iftaar recipes which i make mostly during ramadan time.

    1. aloo and kheema cutlets.

    recipe :
    1. minced meat / kheema - 200 gms ( about 1/2 cup)
    2. potatoes boiled and mashed - 2 big ones
    3. ginger -garlic paste - 1/2 tspn
    4. small onion finely chopped -1
    5. green chillies finely chopped -1
    6. turmeric powder - little
    7. red chilli powder - little
    8. salt to taste , green corainder few springs.
    9. egg white -1
    10. bread crumbs.
    method :
    Boil and mash potatoes , add little turmeric , red chilli powder and salt to the potatoes. heat oil in a pan , add the onions and saute till brown , now add the meat and fry for 2 mins. to this add the ginger -garlic paste and fry again. now add chilli and turmeric powder and salt as per ur taste. close the pan for few minutes and sprinkle little water if needed. when the kheema is cooked add the green chillies and the corainder leaves. remove from heat and cool.

    to make the cutlets - take a small ball of potato mixture in ur hand and make it flat on ur palm now place one tspn of meat mixture on it and close the potato mixture and flatten it to make a cutlet. dip it in egg white and roll over the bread crumbs and shallow fry them in hot oil.

    serve hot with green chutney.

    Hi Samna,

    I will definitely try your recipe for keema cutlets. My recipe mixes mashed potatoes and keema before rolling into cutlet shape.

    Do you have recipe for shahi tukda ?? My friend makes it for ramadan and i simply love it.

    thanx for appreciating my recipe. yes i do make shahi tukre hope u try it and like it.
    well here's the recipe :

    bread slices - 8 cut into desired shape ,
    condensed milk - 1/2 tin
    milk - 1 cup
    cornflour - 1 tbspn
    cardomom powder - 1 tspn
    nuts - 1 tbspn chopped
    oil for frying

    sugar syrup :
    sugar - 1 cup
    water - 1cup

    method : prepare the sugar syrup by boiling water and sugar together. keep aside.

    make a paste of cornflour with some milk. mix condensed milk with the rest of the milk. bring this milk mixture to boil. ass the cornflour paste and stir constantly until thickens. all the cardomom powder.

    cut the bread slices into two and deep ry in hot oil till golden brown and immediately put the fried bread into the sugar syrup. dip for a minute and remove from syrup and arrange them on a serving tray.
    top each piece with 1 tbspn milk mixture and top it with nuts. chill


    hope u liked the recipe , it looks long but very easy to prepare.

    Hi Samna,

    Thanks for the recipe. I will definitely try it but will use tea rusks instead of deep frying the bread pieces. I think it will cut down the prep time as well as be more healthy =).

    mixing cornflour paste to thicken the milk is somthing I have never tried before. I use semi dry khoya also to top the pieces.

    Do you have recipe for making saffron sevaiya?? that is also one of my favorite dishes but i can never make it as good as my friend sofia who makes it on ramadan.

    nice name or is it nick name?
    well u have given me a really good ida of using tea rusk never tried it will try it now. well regarding seviyan , i make 2 kinds in both i use saffron . one is just sevaiyan with sugar and khoya and the other one is seviyan with milk which we call sheer khurma. let me know which one is it.
