Yummy millet burgers/koftas

    I stumbled upon a very old recipe for millet burgers and they are so yummy. Equally wonderful is the consistency: crunchy on the outside, chewy on the inside unlike many veg burgers that are too mushy. They would be great with some really spicy chutney and also good deep fried in little balls for a party and served with toothpicks. You can play around with the quantities in the ingredients a little. The mixture is going to look like its not going to stay together but it will as you fry it (I shallow fried mine in some oil). You can make it gluten free by using some GF flour instead of the whole wheat.

    Cook a cup of yellow millet in the rice cooker with two cups of water.

    3 c cooked millet
    2 carrots grated
    1/2 can drained french style green beans
    2 eggs
    1 c grated cheese
    Mix this together and then add 1/4 to 1/2 c whole wheat flour. It will be not be like a batter but will look lumpy and loose.

    Make your patties or balls and either shallow fry or deep fry.

    They are really good also reheated in the toaster oven.

    Arrowhead is the best per my experience. Sometimes the bulk millet has a lower quality. The Arrowhead brand you don't even need to wash.
