KEY INGREDIENTS One bowl of pasta of your choice. I prefer to use Fusilli pasta made from 100% Drum wheat. If you have an allergy to gluten then you can use pasta made from either corn flour or rice flour Two ripe tomatoes (fresh or tinned but NOT tomatoe purée) FINELY CHOPPED One large onion FINELY CHOPPED Fresh ginger FINELY GRATED Two green chillies (or as per your taste) finely chopped A handful of broccoli florets One green capsicum CUT UP LENGTHWAYS 10 black olives pitted CUT IN HALVES A bunch of fresh basil FINELY CHOPPED (you can use dried basil if fresh is unavailable) METHOD BOIL THREE CUPS OF WATER WITH A LEVEL TEASPOON OF SALT. WHEN THE WATER IS PROPERLY BOILED ADD THE PASTA AND BOIL FOR 12 MINUTES BUT DO NOT COVER (YOU MUST TIME THIS AS LESS TIME WILL LEAVE THE PASTA UNDERCOOKED AND MORE TIME WILL MAKE THE PASTA FLOPPY). REMOVE FROM HEAT, DRAIN AND KEEP ASIDE HEAT SOME OLIVE OIL IN A FRYING PAN, ADD THE ONION AND FRY UNTIL ITS LIGHT GOLDEN BROWN. ADD THE GINGER AND CHILLIES. ADD THE BROCCOLI AND CAPSICUM. STIR FRY FOR APPROX 5 MINS. ADD THE TOMATOES AND BASIL. ADD SALT TO TASTE AND COOK FOR ANOTHER 5 MINS. THEN ADD IN THE OLIVES. FINALY ADD THE PREVIOUSLY BOILED PASTA. ROLL OVER GENTLY SO AS NOT TO BREAK THE PASTA. TURN OFF THE HEAT. SPRINKLE FRESHLY GROUND BLACK PEPPER. THE PASTA IS READY TO SERVE. PASTA IS BEST SERVED WITH A SALAD OF YOUR CHOICE. ENJOY!
STIR FRIED AUBERGINES INGREDIENTS 5 SMALL AUBERGINES 2 POTATOES TEASPOON CUMIN SEEDS GREEN CHILLIES TO TASTE RED CHILLI POWDER TO TASTE 1/2 TEASPOON TUMERIC CHAAT MASALA DICE THE AUBERGINES AND POTATOES. FINELY CHOP THE GREEN CHILLIES. HEAT SUNFLOWER OIL IN A PAN, ADD CUMIN SEEDS AND WHEN THEY POP ADD THE DICED AUBERGINES AND POTATOES. ADD SALT TO TASTE, RED CHILLI POWDER AND TUMERIC. COVER AND LEAVE FOR 5 MINUTES. THEN REMOVE COVER AND STIR WELL. COVER FOR ANOTHER 5 MINUTES. THEN REMOVE COVER, STIR WELL. SPRINKLE A GENEROUS HELPING OF CHAAT MASALA. STIR FRIED AUBERGINES ARE READY TO SERVE. BEST SERVED WITH TANDOORI ROTI OR NAAN. ENJOY!
Sounds like a lovely preparation! Just like to add a small tip based on my past experiences. I have found that sprinkling some grated cheese on the top of the pasta not only looked good as a garnish but also added an extra flavour and creamy texture to the dish.
I have tried below Pasta recipe and my family liked it.. I had seen the Shrimp version of it FB. 1.Boil Spaghetti pasta and keep it aside. 2.In Non Stick pan add 1tbsp oil and little butter ( optional) 3.Add chopped garlic cloves (2) and Chilli flakes 4.Add chopped chicken(3 thigh piece) and salt as per taste 5.Let the chicken cook until fully cooked. 6.Add baby spinach 2 cups or more 7.Add 1/2 tspn oregano pwder , 1/2 tspn basil pwder 8.Add shredded mozzarella cheese and stir for 1-2 mins . And squeeze 1/2 lemon and serve hot. You can replace chicken with Shrimp / veggies
