Ingredients 6 hard-boiled eggs, halved lengthways 1/2 container pepper or garlic cheese spread 1 small onion very finely chopped 1 small green pepper, seeded and very finely chopped 125gms cooked prawns, shelled de-veined and chopped 1 tsp. lemon juice Dash of Worcestershire sauce Salt and pepper Large pinch red chilli powder Shredded lettuce and sliced tomato to serve 1 tbsp. finely chopped coriander, to garnish Method - Using a teaspoon, scoop out the egg yolks into the food processor or blender; blend until smooth with the cheese spread or with a fork. Transfer to a medium bowl. - Stir in the onion, green pepper, prawns, Worcestershire sauce, lemon juice, salt, pepper and chilli powder. - Using a teaspoon, place generous amounts of the mixture into the egg whites. - Arrange on a bed of shredded lettuce and tomato slices. - Sprinkle with coriander. - Serve at room temperature.
