    Alu-methi-gobi Stuffed Parathas - very filling with curds!

    Finely chopped potatoes, cauliflower & methi - each 1 cup

    Finely chopped tomatoes - ½ cup

    Masalas - your choice, but make it spicy.

    Heat 2 tbsp oil, fry methi well, then add potatoes & cauliflower with haldi.

    Cover & cook till done.

    Add tomatoes, salt & masalas.

    Simmer till dry.

    Proceed as shown in the photos.

    Eazy Cheesy Rolls:- use up left over phulkas!!

    Plain phulkas can be easily converted to cheesy rolls.

    To spread:

    Mix together:


    Cheese spread - 1 tbsp

    Thick curds - 2 tbsp

    Minced chillies & coriander - 2 tsp

    Chaat masala - ½ tsp

    salt

    For stuffing:


    Saute in 1 tbsp oil:

    Cabbage & capsicum juiilienes - each ¼ cup

    American corn, lightly crushed - ½ cup

    Ginger-garlic paste - 1 tbsp

    Salt.

    Then add

    Tomato sauce - 1 tbsp

    Red chilli powder & chaat masala - each, 1 tsp

    Salt

    Mix well & remove.

    Spread 1 tbsp paste on each roti, keep 1 tbsp filling in centre.

    Fold as shown.

    Grease a tava with 1 tsp ghee, keep rolls & apply little ghee on top.

    Fry till golden colour on both sides.

    Serve topped with little spread, tomato sauce & chopped coriander leaves.
