Prawn Fry

    Ingredients :

    Prawns – ½ kg
    Ginger –garlic paste – 1 tsp
    Red chilli powder – 2 tsp
    Corn flour – 1 ½ tsp
    Maida – 1 tsp
    Salt
    Curry leaves – a sprig chopped fine
    Oil for deep fry

    Method :

    Clean and de-vein prawns. Add ginger-garlic paste, chilli powder, corn flour, maida, salt and curry leaves to the prawns and mix well. Keep aside for 2 hrs. (marination ).

    After 2 hrs just before frying, add grated coconut OR Coconut powder – 1 ½ tsp to the marinated prawns and mix well.

    Heat oil in a kadai and deep fry the prawns till done.

    Note :

    1. Adding coconut enhances the flavour .

    2. frying prawns for a longer time makes it rubbery; remove the prawns as soon as it becomes lighter and little crispy.

    VARIATION :

    Instead of deep frying the prawns, you can also grill them.
