    Pasta Cutlet

    250 gms spaghetti (boiled)
    Oil to deep fry + 1 tsp
    2 tbsp butter
    2 tbsp refined flour (maida)
    2 cups of milk
    Salt to taste
    ½ tsp pepper powder
    ¼ tsp mustard powder
    ½ cup cheese (grated)
    Fresh breadcrumbs

    Heat butter, add refined flour and sauté for a couple of minutes. Gradually add milk, stirring all the while to avoid lumps. Add salt, pepper and mustard powders and stir to mix well. Remove from heat and add grated cheese and mix well. When the white sauce cools a little, add boiled spaghetti and mix. Add fresh breadcrumbs as required to get dough consistency. Heat sufficient oil in a kadai. Shape the dough into marble-sized balls, press slightly and deep fry till light golden. Remove and drain onto an absorbent paper. Serve hot with any sauce.
