Its quite a old recipe Sandy. But I wonder why this was not available in any hotels. Yes Sandy! Because we use a plate to steam idli batter it is called Tatte idli( Mostly famous around Mysore, Bangalore ) Moode or Kotte are idlis made wrapping screw pine leaves and jackfruit leaves. The idli batter usually is made of red rice. I love them so much !!
Wow Nice recipe . We do something called Kanchi idly in small tumblers little similar to your recipe.

Nopes we dont make both the varieties which u mentioned @Sandycandy We prepare these thatte idlis, normal idlis, kanchipuram idlis.... I prepare mini idlis for my dd, with grated carrot, beets and palak, to make it colorful
