kaju ka salan 250 gm wet peeled kaju (soaked in hot water for 5 minutes) ½ fresh coconut (grated) 2 large onions (chopped) 1 tsp garam masala powder 1 tbsp red chilli powder Pinch of turmeric powder Salt to taste 4 to 5 tbsp oil 4 cloves garlic (chopped fine) 1 tomato (chopped fine) Coriander leaves (garnish) Saute the onions in a kadai on a medium flame till golden brown. Remove from kadai and keep aside. Saute the grated coconut in the remaining oil till it turns brown. Remove the coconut and mix with the sauted onions. Add garam masala, red chilli powder, turmeric powder and salt to the coconut-onion mixture and mix well. In a pressure cooker, add one tablespoon oil, add the chopped garlic and saute for a minute. Add the onion coconut mixture, then chopped tomato and mix well. Add the peeled cashewnuts and cook for 2 to 3 minutes. Add 3 cups of water and pressure cook till three whistles. Garnish with coriander leaves and serve hot with rice or rotis.
