Cooking time – 20 mins No. of portions – 4 (8 utappams) Ingredients: For the Utappam <?xml:namespace prefix = st1 ns = "urn:schemas:contacts" /><st1:Sn>Rice</st1:Sn> (soaked and ground) – 2 cups Urad dal (soaked and ground) – 1 cup Methi seeds (soaked and ground) – 2 teaspoon Salt as per taste Oil – 4 tablespoon For the Topping Cauliflower (boiled and chopped) – 1 cup Onion (chopped) – 1 no Tomatoes (chopped) – 1 no <st1:GivenName>Ginger</st1:GivenName> (chopped) -1 inch piece Coriander leaves (chopped) – 2 tablespoon Salt as per taste Cheese cubes (grated) – 4 nos Method: Mix all the ingredients of the Utappam except oil and let it set overnight. Put a little oil on a pan. Spread out a little Utappam batter and form small round pancakes. Sprinkle the topping evenly on the Uttapams. Cover it with a lid and let it cook on a slow fire till you can remove it from the pan. Serve the Utappams with chutney (optional).
