A Crispy Potato Snack

    This crispy potato snack is a regular feature in my home on Sunday evenings and on rainy days as well. In fact potato tikias as is called in Hindi is a filling and delicious snack any time of the year. I sometimes pack this in my kids lunchbox with tomato sauce, and they just love to eat it in school. At times I have to pack 20 or more tikias on my kids demand for the whole class to share.

    Ingredients;
    (makes 4 tikias)

    • 2 medium size potatoes
    • 1 onion
    • 4 bread slices
    • 1 tbsp coriander leaves
    • 1/2 tsp. turmeric
    • 1 tsp chilly powder
    • 1/4 tsp amchoor powder
    • salt as desired
    • oil to deep fry
    Method: Boil the potatoes, peel it and mash it with hands. Peel and slice the onion finely. Take a bowl and add mashed potato, sliced onion and mix in rest of the ingredients (except oil).
    Take a bread and dip in water for a second and squeeze it with both the hands. Now fill a little of the above potato mixture and close the bread tightly. Take care that potato mix does not spill out, else tikia will break while frying in the oil.
    Heat oil in a wok and deep fry the tikia till it is golden brown on both the sides. Take out and make other tikia the same way. Keep the cooked tikias on a tissue paper to absorb the excess oil.

    Serve hot with fresh coriander chutney or tomato sauce.
