Please suggest delicious beetroot recipes. I currently put beetroot in sambar but I don't eat this vegetable besides this. I tried to make curry with it but the beetroot was sweet and curry was garam, and the taste combination didn't fit for me. Because it is such a sweet vegetable, I sometimes steam cook it and blend into a fruit drink along with pears or other fruit's of my choice. How do you use beetroot in your cooking?

Grate beetroot. Steam cook. Add ground paste of chillies and coconut. Cook qnd add thick curds. Goes well with rotis and rice too. Make vadas. Grate and add to parathas Make beetroot koftas for kofta biriyani or gravy. Pickle them. Cube. Add lemon juice ginger juliennes chillies and salt. Allow it to rest for a day to soak up. It is ready to much. Beetroot halwa just like carrot halwa. Just juice it and have. Steam sprinkle black salt and some herbs .

Bring to a boil Goes with rice/roti When u cook beets the water left can be used to make soup along with tomatoes pepper and salt
i do as this, first start with tadka, mustard seeds, cumin, chana dal, urad dal, curry leaves, turmeric powder. later add ginger, green chili pieces, then add betroot peices, salt, just saute for 10 min in simmer. dont add water. if beetroot is cooked add grated fresh coconut and coriander leaves. good with chapatis, or as a side dish for sambar/rasam.
I add steam cooked and pureed beetroot to knead chappathi dough,add in dosa batter and pancake batter.Also make Kerala style beetroot thoran, Chettinadu beetroot kurma, beetroot in peanut gravy etc.
