Vegetable Sambar Ingredients 2 cups Toor Dal(soak for some time) 1/4 vegetables(Drumsticks, eggplant, lauki, carrot) 1/4 fenugreek seeds, 1tsp jeera, 1tsp mustard, 2or 3 garlic pcs 2 or 3 dry red chilies, turmeric powder Hing, 1tsp red chili powder, 1 tomato(optional) 1 or 2tsp tamarind paste, jaggery Curry leaves, coriander leaves Water, salt to taste and oil Method Add in pressure cooker and water also, add turmeric powder, garlic pcs, salt an little bit oil and make whistles for 2 or 3. Lightly mash dal and keep aside. Wash all vegetables, cut it and Boil for some time in different bowl, drain it and keep aside. Heat the oil in a kadai, add jeera, mustard, fenugreek seeds, curry leaves , vegetables, tomato stir it and cook for few mints and add dry red chilies, hing, again cook for few secds. Add tamarind paste, red chili powder and sambar powder mix it well again cook for few seconds. After that add mashed dal stir it properly and add jaggery and add water(desired consistency) cook for few mints. Add coriander leaves and remove the flame. Serve hot Sambar with Dosa, Idly or Uttappam as well as Rice also.
